High in the Matagalpa region amidst the Isabella Mountain Range sits Finca San Antonio, where this coffee was produced. The Günkel Mairena family has been growing coffee for 46 years on Finca San Antonio with Maria Felícitas Mairena de Günkel currently running and managing the 79 hectares of coffee-producing land today.
The farm executes excellent environmental standards, with most of the coffee being grown under shade within agroforestry systems. 45% of the farm is protected as El Arenal Nature Reserve, housing one of the few intact portions of the cloud forest in Nicaragua. In 2001, the farm was even declared a Private Wildlife Reserve.
Thanks to the protection of the native cloud forests, the farm teems with wildlife with creatures such as black panthers, jaguars, deer, collared peccary, coatis, agoutis, and birds such as the bellbird, quetzal, and goldfinches roaming the lands.
During the harvest, the coffee is carefully handpicked and transported to the wet mill, where they are submerged in water tanks to remove floaters, or lower quality cherries.
Next, the coffee is placed in containers with valves to initiate the anaerobic fermentation process. This prevents any outside air from entering as the coffee ferments for 72 hours. Once complete, the coffee is moved to the drying area of Saxony Estate Coffee, to dry on raised beds for 8 hours in the open sun and finished in a shaded tunnel for another 28-30 days. Lastly, the coffee is transported to a dry mill to be hulled and prepared for export.
