This coffee was produced by José Adolfo. Having grown up in the fields with a family dedicated to agronomy, José had the opportunity to get involved from a young age. But when his parents had to sell the farm, José kept on to the hope to owning a farm of his own. He continued working hard and eventually discovered the region of San Juan Ostuncalco for having the perfect environment for coffee cultivation. That was where he bought a piece of land and started his own farm.
In the last forty years, twenty-seven families make a living from this coffee. They are working together to obtain a better cup by caring about every step of the way taking advantage of the environment. The high altitude, the humidity, the forest and the terrain make different microclimates in the region, creating the perfect terrior for specialty coffee.
At Los Cerritos the harvest is made with special attention collecting only the ripe cherries, after depulping the coffee is carefully fermented in tanks, once the time is complete, they wash the coffee until is completely washed and ready to be dried, they extend the coffee in the patios to get dry in the sun. This whole process is done at the farm.
