Las Nacientes Black Honey Red Catuai
This is a low acidity coffee; gentle notes of apples and cherries, nutty, with notes of dark chocolate, and ends with a slight rounded fermenty finish.
Café Rivense del Chirripó is a family micromill founded by Régulo Ureña and Isabel Rojas in 2005, located in southern part of Costa Rica, in Brunca region sett- led in a micro-region called Chirripó.During first years, the family had to fight hard with many factors in the environ- ment: low international prices, lack of information on processing coffee and financing for coffee projects, to come from an unknown region for specialty coffee, neighbors predicting that the project would fail.
However, perseverance, faith in the project and lots of hard work, knowing the quality the farm can grow, pushed Ureña Rojas family to continue through a long road to be recognized as Specialty Coffee Producers.
In 2019 one microlot from Régulo placed 5 and one from Isabel placed 20 at Cup of Excellence Costa Rica, being the firsts from Chirripo Region to be in COE Top Ten.
The farm is managed with a sustainable system, focused on reduce carbon foot print in the environment: proper shade management to provide organic material to soil and keep cofee trees fresh; fertilize based on annual soil analysis; use of herbicide in specific plots with strong grasses; all the water sources are protected and through the farm there are fruit trees to feed wildlife.
The name La Naciente (water source in spanish) comes from a spring next the coffee plantation, it provides water to all the farms Ureña Rojas Family own.
The coffee is picked when the cherries are ripest, put to dry in raised beds (no water used to transport the coffee) to keep pulp and mucilage full and clean, dried 100% by sun on raised beds, milled, classified and packaged in the farm with high quality standards.
