Carbonic Maceration is a special coffee processing method whereby coffee cherries are fermented in a carbon dioxide-rich environment.
This particular lot was first exposed to aerobic fermentation for 24 hours, then placed into GrainPro bags with CO2 added and allowed to further ferment at a temperature below 22°C.
The result is a winey-tasting coffee with notes of pomegranate and raspberries.
