Papua New Guinea (PNG) is a relative newcomer to the specialty coffee scene. Its smallholder farmers, who produce 85% of the country's coffee, face challenges transitioning to specialty coffee due to their remote locations and poor infrastructure.
Regardless, we were delighted by this Jiwaka Natural. Notably, it presented a prismatic mixed berry flavour and a tireless sweet praline aftertaste.
The coffee cherries used for this coffee are selectively handpicked and delivered to the village collection station in Jiwaka. Only ripe, red cherries are used to ensure uniform and high-quality results. The cherries are laid to dry on thick, moisture-proof tarps made from GrainPro bags and raked frequently to ensure even drying over 14 days. The dried cherries are then rested in bags and transported to the dry mill for further processing.
