Our new offering from China is now available! We were thrilled by its lemonade acidity, dragonfruit sweetness, and jasmine fragrance. We've always wondered what specialty coffee from China would taste like, and if this coffee is any indicator, it's sweet, gently supported by a light-medium body, with an overall round and pleasant flavour profile - great for everyday drinking.
These coffee cherries are carefully and selectively hand-picked by farmers from various small to medium-sized farms. The cherries are then mechanically pulped and sent down grading channels which both wash all parchment and remove any underripe coffee.
Instead of being sun-dried, the parchment coffee is then dried in multi-level static driers that are fired by coal or wood.
The Chinese Government has declared a focus on the production of coffees from Yunnan in response to a significant rise in both domestic and global demand for coffee. With that, we're excited to see how coffee cultivation methods in China will develop and the new flavours they will bring us. Come along for the ride and try Kongque today!
