Produced by the Brito family, this coffee was cultivated on Fazenda Santa Hedwirges in Sul de Minas, Brazil. The Brito family has farmed on Fazenda Santa Hedwirges for 4 generations - over 90 years. The farm is located at 900 meters above sea level. Their focus on high-quality coffee production, combined with the superb weather conditions has resulted in a balance tasting coffee bursting with berries.
These coffee cherries are fermented for 36 to 48 hours. Then, they are washed in cold water to slow fermentation and taken to machines where they are placed in thick layers. In these machines, some of the only ones in Brazil, hot air between 30°C and 35°C is injected into the cherries to promote slow fermentation. The Britos slowly ferment the cherries over a longer than usual period of time. Once fermentation is done, the cherries are moved to patios to dry. During this process, they are raked frequently to ensure even drying.
