This coffee was carefully hand-picked in order to use only the ripest cherries. Cherries were first fermented for 14 hours anaerobically under water, and placed on raised beds after for 25 days until ideal moisture content was achieved.


This San Bernardo varietal is a natural mutation of Typica originated in Guatemala, and is very rarely seen in Colombia. The trees are smaller than Caturra or Castillo and are not resistent to leaf rust, resulting in low harvest yield. Cup profile is jam packed with fruits, sweetness, with a slight winey aftertaste.
