Luis Anibal Washed Lactic Ombligon (Espresso)
This coffee is produced by a star producer Don Luis Anibal Calderon at Finca Villa Betulia.
This coffee was exposed to a dry anaerobic fermentation of 24 hours, and later placed inside plastic tanks for 30 hours. To develop a higher concentration of lactic acid, the coffee was then placed inside a water tank with temperature maintained at 20 degrees Celsius. Lastly, coffee was pulped and sun-dried on raised beds until 10.5% moisture content was achieved.
This microlot is 100% Ombligon. This varietal is currently under research in order to determine its origin. It is said that it is a mutation that took place in Acevedo, Huila, and believed to be a natural cross between Typica, Caturra and Gesha.
This is a med - low acidity and sweet tasting coffee, with prominent tastes of apple and sandalwood. The taste of condensed milk is also pronounced in an espresso with milk setting.
