Jairo Arcila Honey Eucalyptus Pink Bourbon
Grown by Jairo Arcila at Finca Santa Monica and is the fourth highest bidded coffee at the recent Singapore Specialty Coffee (Micro-lot) Auction.
This coffee was exposed to a dry anaerobic fermentation of 72 hours with the pulp on. During this fermentation process, tartaric acid and eucalyptus leaves were added.
Cherries were then pulped and left to dry on raised beds until 10.5% moisure content is achieved.
