This exceptional 100% Yellow Bourbon micro-lot comes from Fazenda Rio Verde, part of Ipanema’s prestigious Premier Cru range. Grown in the Serra da Mantiqueira region of Minas Gerais, Brazil, this coffee was harvested from Glebe B5 at 1,096–1,132 meters above sea level, where meticulous cultivation and processing techniques elevate its quality.
Ipanema Agricola, known for its innovative approach to specialty coffee, launched the Premier Cru range in 2018 to showcase small-batch, handcrafted lots from the highest altitudes of their historic farm. These carefully curated coffees push the boundaries of Brazilian specialty coffee, highlighting unique processing methods and terroir-driven flavors.
Processing & Fermentation
This lot was selectively hand-harvested and processed using the Natural Anaerobic method. The cherries underwent 82 hours of anaerobic fermentation, intensifying their complexity and fruit-forward characteristics. After fermentation, they were dried on raised beds for 511 hours, allowing for slow, even drying that enhances clarity and sweetness in the cup.
