This exceptional coffee was meticulously cultivated by Atilano Giraldo at the farm, El Palmichal. Every step of its production adheres to stringent ripeness criteria, ensuring only the finest cherries are selected. After meticulous floating and handsorting to eliminate any imperfections, the cherries undergo a 30-hour underwater fermentation process before being carefully pulped. Subsequently, the parchment is delicately washed and dried under precisely controlled temperatures until reaching the perfect moisture content.

This exquisite microlot showcases the exclusive Caturra variety, which traces its origins back to the beautiful region of Minas Gerais, Brazil. Born as a natural mutation of Red Bourbon, Caturra not only boasts a higher coffee yield but also exhibits enhanced resistance to plant diseases compared to its Bourbon counterpart. The result is a coffee experience that exemplifies unparalleled quality and craftsmanship.
